No more cheese! No more refried beans!

I think I've overloaded myself on quesadillas. I think last night was the 4th night in a week and a half of having quesadillas, and we still have at least a pound of cheese left!! And I am tired of refried beans even though I still like them. It's time to put some stuff in the freezer, methinks. BWAHAHAA

But I made nachos for the first time ever yesterday. I don't think I will ever want to eat nachos from a restaurant again!!!!

Nachoes are my favotite meal ever! I used to make nachoes at least once a week! What was so special about your nachoes yesterday?? Did you use meat?

Ever have nachos at a pub or something, and they're practically naked? Or the cheese isn't melted? And they get cold quickly because they were heated up in a microwave? Grody!

Last night, we used these Trade Joe's thick soy and flaxseed tortilla chips, topped with refried beans, a bit of cheese, sliced olives, diced peppers, diced tomatoes, and more cheese! The cheese was a Tex-Mex blend from Costco. Maybe I could go for some more nachos.

We didn't use meat since there was a vegetarian amongst us. I did find a lot of recipes on the 'net that used meat...like turkey and pulled pork!
